(Charlevoix, MI) Learn Great Foods kicked off the season with its Charlevoix Practice Tour last week! We went to four different stops. First we went to the Parsons Family Farm where they showed us how they produce Harwood Heritage Gold Maple Syrup. We gathered in the cozy shop where they sell their products - from actual syrup to maple sugar candies. Terri and Dave Parsons are both very down to earth folks that fielded many questions from our genuinely interested and informed group of guests. The lovely couple showed us the facilities where they brought the sap after they had collected it from the taps, where they boiled it down and bottled it. They also explained how they tap their trees, why they choose certain locations to tap on the tree and how they keep track of it all. They've carefully tracked the season's production through these tiny jars that show what the product looked like after each collection. Stay tuned for more... Maple syrup gradation through the months of collection.
